AUGUST WINE - Albariño

Clements Hills Albariño tends to show higher acidity, citrus/green apple, floral notes and a pronounced mineral quality because of the AVA’s shallower, lower-vigor volcanic soils.

Foods with salt, citrus, herbs, freshness and a little richness will pair nicely with this wine! Here are a few suggestions but feel free to create your own based on what you think pairs best!!

Shrimp ceviche with lime, cilantro and avocado. The acidity mirrors the citrus while the wine’s minerality works beautifully with seafood.

Crab cakes with lemon aioli ~ richer, but the Albariño cuts right through it.

Ahi tuna poke with cucumber, sesame and a little ponzu.

Goat cheese crostini with lemon zest, herbs and a tiny drizzle of honey.

Prosciutto + melon ~ the salty/sweet contrast works wonderfully with crisp Albariño.

Grilled chicken with lemon and herbs ~ Clements Hills wines have enough acidity and structure to handle poultry.

Fish tacos with cabbage, cilantro, lime crema and perhaps mango salsa.

Spanish tapas ~ Marcona almonds, Manchego, olives, boquerones and grilled shrimp would make a fantastic little Albariño board.

One important rule with dry Albariño: keep the dessert less sweet than you normally would. If the dessert is considerably sweeter than the wine, the Albariño can suddenly taste thin, sour or aggressively acidic.

Peach, nectarine or key lime tartlets ~ It pulls out the stone-fruit character beautifully.

Almond cake with fresh peaches ~ almond + stone fruit + Albariño would be fantastic.
